First things first 

What is Cognac ? 

Cognac is a grape based spirit made from specific grape varieties, including Ugni Blanc, Folle Blanche, and Colombard. It is a type of brandy that is produced in the Cognac region of France.

To be considered a true Cognac, the wine resulting from the above mentioned grapes, must be distilled twice in copper pot stills and needs to be aged in French oak barrels for a minimum of two years.

Cognac History

Cognac has a rich history. The first written records of distillation in the region date back to the early 17th century. It was then, when Dutch merchants bought wine from the Cognac region and wanted to ship them to the Netherlands. They soon realized wine suffers during transportation, so they distilled it.

Over time, Cognac gained popularity both in France and abroad, and by the early 1900s, it had become a symbol of luxury and refinement. It has always played a significant role in French history and culture. Today, Cognac remains a beloved spirit that is enjoyed by people all over the world.

The treasure which is Cognac

Cognac is a unique spirit for several reasons. First and foremost, it can only be produced in a specific region of France, which includes the Charente and Charente-Maritime departments, and also parts of the Dordogne and Deux-Sèvres. This region has a unique microclimate, which is ideal for growing the specific grape varieties used in Cognac production. The region’s soil, topography, and climate create the ideal terroir for producing high-quality Cognac.

Cognac is also unique in its production process and its attention to detail. After the specific grape varieties are fermented and distilled twice in copper pot stills, the resulting eau-de-vie is aged in oak barrels for a minimum of two years. During this time, the master blender carefully monitors the process. In many cases, the art of producing Cognac is passed down from generation to generation, ensuring that the tradition is upheld and the spirit remains of the highest caliber.

Additionally, Cognac is known for its strict regulations and grading system. The four main grades of Cognac are VS (very special), VSOP (very superior old pale), XO (extra old), and XXO (extra extra old) with the age of the youngest eau-de-vie used in each blend determining the grade. Hors d’ Age (beyond age), which technically only belongs to the XO age designation, generally refers to a producer’s oldest rarest Cognacs. It’s the age category that describes the highest quality Cognac–in terms of age that is. 

Blind Tasting 

What is Cognac Blind Tasting? 

Blind tasting Cognacs is the process of evaluating the spirit without knowing its brand or any other identifying information. The practice involves assessing the Cognac solely based on its aroma, flavor, and mouthfeel, with the goal of removing any outside influences and evaluating each spirit on its own merit.

Why is it important?

Blind tasting in Cognac is important for several reasons, each of which help to explain why we felt the family tasting needed to be done in this way: 

  1. It removes any preconceived notions or biases about the brand (or age) of the Cognac, allowing the taster to evaluate the spirit solely based on its aroma, flavor, and mouthfeel. This helps to ensure that each Cognac is evaluated as objectively as possible, with a minimal amount of outside influences.

    For us, we have experience with so many brands and so many Cognacs, and with what Cognacs our customers highly appreciate. It was very important to strip out as much of that outside influence as possible. The only thing we knew is that this was an Hors d’Age blind tasting.

  2. Cognac blind tasting is a valuable tool for developing a deeper understanding of the unique qualities of each Cognac. By focusing solely on the spirit’s aroma, flavor, and mouthfeel, tasters can gain a deeper appreciation of the complex flavors and aromas that make each Cognac unique.

  3. Blind tasting in Cognac can also help tasters develop a better understanding of their own palate. Tasters can identify their personal likes and dislikes and gain a better understanding of the specific qualities they are looking for in a Cognac. This can help them make more informed decisions when purchasing or selecting Cognacs, and can also help them appreciate and enjoy the unique qualities of different spirits. 

While we all made a conscious effort to be as objective as possible in the tasting, it comes as no surprise that each of us brought to the table our own preferences in terms of smell, taste, and texture. Despite our best efforts, we could not each completely suppress our own personal tastes.

Overall, blind tasting is an important tool for evaluating and appreciating the quality and unique characteristics of different Cognacs, and is widely used by professionals and enthusiasts in the world of Cognac tasting. It is not, and should not be, the only way to taste a variety of Cognacs, but for the Family Tasting, it is the best way to properly proceed.

Common Blind Tasting Techniques 

There are several common blind tasting techniques used in the world of Cognac tasting to help tasters evaluate spirits objectively and without outside influences. Here are a few examples:

Black Glass: A black glass is a tasting vessel that completely blocks out all visual cues about the spirit, such as color and viscosity. This helps ensure that the taster evaluates the Cognac purely based on its aroma, flavor, and mouthfeel. We did not pursue this option here, but we do not question its merits.

Single Blind: Single blind tasting involves knowing the Cognacs presented in the tasting – and therefore the brands and age category – but not the order in which they will be tasted.

Double Blind: Double blind tasting involves having no knowledge whatsoever of the Cognacs – and therefore brands and age category – in the tasting. This is the most extreme version of blind tasting, and also the version which strips away the most outside bias. Smell, taste, color, and texture alone lead the way. For this Hors d’Age Family Tasting, we proceeded with a hybrid of single blind and double blind. That is, we all knew it was an Hors d’Age tasting, so that gave away the relative age of the Cognacs. But, we did not know the brands nor the Cognacs involved.

Aroma and Flavor Wheels: Aroma and flavor wheels are visual aids that help tasters identify and describe specific aromas and flavors present in the Cognac. These wheels can be particularly useful for inexperienced tasters or those looking to improve their sensory evaluation skills.

It is easier to precisely identify smells and tastes by consulting a complete list of possible aromas and flavors, than it is to simply state notes from memory. Tasting notes are a key component of blind tasting in Cognac. They are used to describe the aroma, flavor, and mouthfeel of the Cognac, and can help tasters develop a deeper understanding of the unique qualities of each spirit. Here are some key elements of tasting notes in Cognac:

  • Aroma: The aroma of the Cognac can be described in terms of its intensity, complexity, and the specific notes present. Common aroma notes in Cognac include fruit, floral, spice, and oak.

The Hors D’Age Family Tasting 

As Cognac enthusiasts, we love any kind of Cognac but had previously focused on XO Cognacs during our family tastings. This time we wanted to expand our experience with more mature spirits. That’s why I selected a range of Hors D’Age Cognacs for our blind tasting, with the goal of exploring the nuances and complexities of these exceptional spirits.

Definition of Hors D’Age

The term “Hors d’Age” literally translates to “beyond age” and represents the highest quality Cognac in terms of age. Officially, it is classed in the XO age denomination, but it is used for Cognacs that have an average age of 30 years and above – generally speaking.

These spirits offer a unique depth and complexity that can only be achieved through years of careful aging and blending, making them a perfect choice for our blind tasting.

The Set Up of the Blind Cognac Tasting

By selecting a range of Hors D’Age Cognacs, we hoped to challenge our palates and expand our understanding of this unique spirit. Our group included:

    • Sophie: founder of Cognac Expert together with her brother Max and especially loves to prepare dishes with Cognac.
    • Max: his passion is to push the diversity of Cognac and to support small Cognac producers. That’s why he and his sister started Cognac Expert 11 years ago.
    • Brian: not only Sophie’s husband but also moved all the way from the US to live his best life in the Cognac region.
    • Malte: almost since the beginning, part of the Cognac Expert family, most of the time behind the scenes, and has a wide knowledge of Cognac.
    • Thomas: highlighting all the different Cognacs in the crowded industry is not easy but he outdoes himself each time by creating the best Cognac campaigns.
    • Taylor: Also moved from the US to the country of savoir-vivre and has made his Cognac hobby his profession.
    • Nick: The contact person for all customer questions, the help in person when it comes to everything at Cognac Expert and no longer imaginable without.
    • Camille: youngest member of the Cognac Expert family but is not afraid to devote herself fully to the world of Cognac.
    • Virginia: developed a deep love and respect for Cognac which made her organize and host this Hors D’Age Family Tasting.

So, for this Hors D’Age Family Tasting, we all came together to appreciate and evaluate each Cognac, with the goal of expanding our knowledge and understanding of this sophisticated spirit and also finding the best tasting Cognac. And of course, such a Cognac tasting experience is always fun so we quite enjoyed hanging out with each other talking about our beloved spirit.

During the blind tasting, we each had 15 glasses of Cognac in front of us, with each glass numbered but the identity of the Cognac hidden. The cognac tasting glasses were standard Lehmann Eau de Vie 15 glasses. 

As the organizer of the tasting, I was the only person who knew which Cognac was behind each number, ensuring that the blind tasting was truly “blind” so each of us could fully focus on what the cognac tastes like. This allowed the others to focus solely on the aromas and tasting notes they were getting from each Cognac, without any preconceived notions or biases affecting their evaluation.

The Hors D’Age Blind Tasting Procedure

As we progressed through the blind tasting, we shared our thoughts and discussed our tasting notes for each cognac, learning from each other’s unique perspectives and preferences without sharing our personal ratings. We filled out a provided sheet with our personal ratings and observations, capturing our individual impressions of each Hors D’Age Cognac.

In addition to sharing our Cognac tasting notes and personal ratings, we also took the opportunity to make predictions about the identity of each Cognac, based on our observations and past experiences with Hors D’Age spirits. This added an extra level of engagement to the tasting, as we each attempted to use our knowledge and intuition to correctly identify the origin of each sample.

I noted some of the best comments made during the Cognac tasting event, which of course I want to share with you:

This Hors D’Age tasting is amazing. It’s always fun to do Cognac taste test

 During our Cognac tasting, we took our time to savor and evaluate each of the 15 different Cognacs over the course of several hours. We went back and forth between the different Cognacs, taking breaks in between to reset our palates and ensure that we were giving each Cognac the attention it deserved.

After hours of tasting and taking notes, it was finally time for the big reveal of the Hors D’Age Cognac blind tasting. We all eagerly awaited the moment to see which Cognac was behind each number, eager to see how our predictions and ratings matched up to the actual Cognacs. It was an exciting moment, filled with anticipation and excitement.

I want to emphasize that our family tasting and our ratings we’ve given are solely based on our personal taste preferences and experiences. The scores we gave might not reflect the objective quality of the Cognacs being tasted, as everyone’s tastes and preferences differ. It’s important to keep in mind that taste is subjective and what one person finds enjoyable may not be the same for someone else.

It also goes without saying that the overall level was extremely high. Not a single one of these Cognacs showed off notes or would be considered unworthy of one’s attention. But, there must be a ranking so here we go.
